Thoroughly clean the squid without slitting them open (see page 126 for cleaning instructions, but leave the skin on), then pat them dry and place in a bowl.
Mix together the olive oil, oregano, salt, pepper, and garlic and pour over the squid. Cover with plastic wrap and marinate in the fridge for at least 3 hours, or overnight. Turn the squid pieces regularly.
Place the tomato, scallion, dill, parsley, mint, basil, bell peppers, and feta in a bowl and mix well. Stuff each squid with this mixture, then thread a small skewer through the end to seal the hole.
Place the squid on a hot barbecue or oiled chargrill pan and cook for about 3–5 minutes each side until cooked through. Serve with lemon wedges on a bed of arugula.
